Glycerol, also known as glycerin, is a versatile humectant widely used in the food industry. It has excellent water-binding properties, which help to prevent food products from drying out and maintain their freshness. Glycerol can be derived from animal or vegetable sources, and it is commonly added to baked goods, confectionery, and beverages. In addition to its humectant properties, glycerol also functions as a sweetener, texturizer, and preservative. Its mild, slightly sweet taste makes it a popular ingredient in low-calorie foods and diet products. Glycerol is generally recognized as safe (GRAS) by the FDA, and it has no known adverse health effects when consumed in moderate amounts.
