So, what is jarabe azúcar invertido?
Jarabe de azúcar invertido is a syrup made by hydrolyzing sucrose into its constituent monosaccharides, glucose and fructose, resulting in a sweeter, more viscous liquid than regular sugar syrup. This process is achieved by adding an acid or enzyme to the sugar solution, which breaks down the sucrose into its simpler components. The resulting syrup has a higher moisture retention capacity than regular sugar syrup, making it a common ingredient in baking and confectionery. Its high sweetness level also means that it can be used in smaller quantities than regular sugar, reducing calorie intake.
