Metabisolfito di sodio, also known as sodium metabisulfite, is a food preservative commonly used in the food industry to prevent spoilage and discoloration of various types of foods. It is a white crystalline powder with a slight odor of sulfur dioxide and has antioxidant properties that help to maintain the texture, flavor, and appearance of food products. Metabisolfito di sodio is frequently found in wine, beer, and fruit juices, as well as in dried fruits, vegetables, and meat products. While it is generally considered safe for consumption, it can cause allergic reactions in some individuals and should be used in moderation.
