Nitrito di sodio, also known as sodium nitrite, is a chemical compound that is widely used as a food preservative and color fixative. It is a white or slightly yellowish crystalline powder with a slightly salty taste and is soluble in water. Nitrito di sodio is commonly added to processed meats such as bacon, hot dogs, and deli meats to inhibit the growth of bacteria and prolong shelf life. However, excessive consumption of nitrito di sodio has been linked to health risks, including an increased risk of cancer and heart disease.
