Palmitato ascorbilo, also known as ascorbyl palmitate, is a synthetic fat-soluble form of vitamin C commonly used as an antioxidant in the food industry. This compound is produced by esterifying ascorbic acid with palmitic acid, resulting in a stable and highly bioavailable form of vitamin C that can be easily incorporated into food products. Palmitato ascorbilo is commonly used to extend the shelf life of packaged foods by preventing the oxidation of fats and oils. It is also used as a natural preservative in cosmetics and personal care products due to its ability to protect against free radicals and improve skin health.
