So, what is proteasa?
Proteasa is a proteolytic enzyme that plays an essential role in the breakdown of proteins. It is commonly used as a food additive and is found in products such as cheese, meat tenderizers, and digestive supplements. Proteasa breaks down complex proteins into smaller peptides, making them easier to digest and absorb. This enzyme is often derived from microbial sources, such as bacteria or fungi, and can be added to food products to improve their texture, flavor, and nutritional value. Proteasa is also used in the production of various fermented foods, including soy sauce and miso.
