So, what is sirop du sucre inverti?
Sirop du sucre inverti, also known as inverted sugar syrup, is a thick, viscous liquid sweetener that is widely used in the food industry. It is made by heating a mixture of sucrose and water with a small amount of acid, which causes the sucrose to break down into its component sugars, glucose and fructose. This process results in a syrup that is sweeter than regular sugar, with a higher moisture content and a lower tendency to crystallize. Inverted sugar syrup is commonly used in baked goods, confections, and beverages to enhance flavor, texture, and shelf life. It also has a range of functional properties that make it useful in food production, such as its ability to control crystallization and increase viscosity.
