So, what is sodium aluminium sulfate?
Sodium aluminium sulfate, also known as sodium alum, is a chemical compound commonly used as a food additive to enhance the texture and appearance of baked goods. This white crystalline powder is a double salt, composed of sodium sulfate and aluminium sulfate. It is a flavorless and odorless substance that is soluble in water and slightly soluble in ethanol. In baking, it helps to create a fluffier texture by reacting with baking soda to release carbon dioxide gas, which causes the dough to rise. It is also used in pickling and as a mordant in dyeing fabrics. However, excessive consumption of this additive may cause health concerns, including stomach discomfort and kidney problems.
