So, what is sodium sesquicarbonate?
Sodium sesquicarbonate, also known as trona or sodium bicarbonate sesquicarbonate, is a white crystalline powder that is commonly used as a food ingredient, particularly in the baking industry. It is a mild alkali with a pH of around 9 and is often used as a leavening agent in baked goods to help them rise. Sodium sesquicarbonate can also be used as a buffering agent and pH adjuster in a wide range of food and beverage applications. Additionally, it has some medicinal uses and is sometimes used as an antacid to relieve heartburn and indigestion. Despite its many uses, it should be handled with care, as exposure to dust or vapors can cause irritation to the eyes, skin, and respiratory system.
