Tripolifosfatos de sodio is a food additive used as a water-retention agent, emulsifier, and stabilizer in the production of processed meats, seafood, and dairy products. This sodium salt of polyphosphate is known for its ability to enhance flavor, texture, and appearance while extending shelf life. It works by binding water molecules to prevent dehydration, improving the juiciness and tenderness of meat products, and preventing the formation of ice crystals in frozen foods. Although generally recognized as safe by regulatory authorities, excessive consumption may lead to health risks like kidney damage or high blood pressure.
