So, what is xanthane?
Xanthan gum is a common food additive used as a thickener and stabilizer. It is created by fermenting sugar with a type of bacteria called Xanthomonas campestris. The resulting compound is a white powder that can be easily dissolved in both hot and cold liquids. Xanthan gum is often used in gluten-free baking to help mimic the texture of gluten, and it can also be found in a variety of other products such as salad dressings, sauces, and ice cream. Because it is a soluble fiber, xanthan gum may have some health benefits, such as improving digestive health and regulating blood sugar levels.
