So, what is podpuszczka?
Podpuszczka is a traditional Polish food ingredient that has been used in cheese-making for centuries. It is a natural enzyme extract obtained from the stomach lining of young calves. Podpuszczka is commonly used as a coagulant in the production of cheese to help separate the curds from the whey. The enzyme reacts with the milk proteins, causing them to coagulate and form solid curds. The resulting cheese has a unique texture and flavor that is highly prized by cheese connoisseurs. Despite being derived from animal sources, podpuszczka is considered a vegetarian-friendly ingredient, as the calves are not harmed in the extraction process.
