So, what is jerusalem artichokes?
Jerusalem artichokes, also known as sunchoke or topinambur, are root vegetables that are native to North America. They have a knobby, irregular shape with a thin, brown skin and a creamy white flesh. The taste of Jerusalem artichokes is mildly sweet and nutty, with a crunchy texture that is similar to water chestnuts. They are a good source of dietary fiber, vitamin C, potassium, and iron.
