So, what is levures chimiques?
Levures chimiques, also known as baking powder, are a versatile ingredient commonly used in baking. They consist of a mixture of sodium bicarbonate, an acidifying agent such as cream of tartar, and a starch or flour to absorb moisture and prevent clumping. When combined with a liquid, the acid and base in the baking powder react to produce carbon dioxide gas, which causes baked goods to rise and become light and fluffy. Unlike yeast, baking powder works quickly and does not require time to rise, making it ideal for quick breads, cakes, and other baked goods.
