So, what is e472e?

E472e is the E-number for diacetyl tartaric acid esters of mono- and diglycerides, commonly known as DATEM. It is an emulsifier and dough conditioner produced by reacting mono- and diglycerides of fatty acids with tartaric acid and acetic acid. The component fatty acids originate from edible fats and oils. Manufacturers use E472e primarily in the commercial baking industry to improve dough stability, increase loaf volume, and produce a uniform crumb structure in sliced breads, rolls, pastries, and crackers.

E472e is possibly vegan because the fatty acids required for its synthesis can come from either plant or animal origins. Plant sources include vegetable oils such as palm, sunflower, soybean, or rapeseed oil, whereas animal sources involve fats such as beef tallow or pork lard. Food ingredient labels generally do not disclose the specific origin of these starting fats. A vegan certification on the packaging or direct confirmation from the manufacturer is necessary to verify that the E472e used in a product is entirely plant-derived.
