Etilendiamino-tetracetato de calcio y disodio, also known as EDTA-CaNa2, is a food ingredient used as a chelating agent in various food products. This white, odorless powder is a complex of calcium and disodium, derived from ethylenediamine tetraacetic acid (EDTA). EDTA-CaNa2 helps to stabilize food products by binding with metal ions that can cause discoloration, off-flavors, and spoilage. It is commonly used in dairy products, canned foods, and beverages. Additionally, EDTA-CaNa2 is approved by the FDA as a safe food additive, with no adverse health effects reported at typical usage levels.
