So, what is farine de froment t65?

Farine de froment T65 is a French term that translates to Type 65 wheat flour in English. It is produced by milling common wheat grains into flour. In the French flour classification system, the designation T65 indicates an ash content between 0.62% and 0.67%, which represents the quantity of mineral matter remaining after incinerating a sample of the flour. This grading results in a semi-white flour that retains a small portion of the outer bran, yielding more texture and color than finely refined pastry flours.

This flour is frequently found on the ingredient lists of French artisan breads, traditional baguettes, sourdough loaves, pizza crusts, and various specialty baked goods. Farine de froment T65 is classified as vegan because it is derived entirely from a plant source. The manufacturing process relies strictly on the mechanical cleaning, grinding, and sifting of harvested wheat kernels, requiring no animal inputs or animal-derived processing aids.
