So, what is food.starch-modified?
Modified food starch is a versatile ingredient used in various food products to enhance texture, stability, and consistency. It is a carbohydrate-based ingredient derived from corn, potato, or tapioca. The modification process alters the physical and chemical properties of starch, making it more resistant to heat, acid, and freezing. This allows modified food starch to withstand processing conditions and maintain its functionality in different applications such as soups, sauces, gravies, dressings, and baked goods. Modified food starch also provides a smooth mouthfeel, improves freeze-thaw stability and reduces syneresis, thus improving the overall sensory quality of the finished product.
