Fosfato de dialmidon acetilado, also known as acetylated distarch phosphate, is a modified starch commonly used as a food ingredient to improve texture and stability. It is produced by chemically modifying regular starch with acetic anhydride and sodium trimetaphosphate, resulting in a high phosphate and acetyl content. This modification makes it resistant to heat and acid, making it ideal for use in food products that require high temperature processing, freezing, or extended shelf life. Fosfato de dialmidon acetilado is often used in processed foods, such as sauces, dressings, and baked goods, as well as in the production of instant noodles and soups.
