Glucose-oxidase is an enzyme that plays a vital role in the food industry as a food ingredient. This enzyme is commonly used as a natural preservative in various food products to prevent spoilage and improve shelf life. Glucose-oxidase works by breaking down glucose in the presence of oxygen, producing gluconic acid and hydrogen peroxide as byproducts, which create a hostile environment for bacteria and fungi. This process helps to extend the freshness and quality of food products, especially those with high sugar content. Moreover, glucose-oxidase is also used in the production of cheese, beer, and wine to improve their texture and flavor.
