So, what is invert syrüp?

Invert syrup is a sweet, viscous liquid that's made by heating sucrose with water and an acid, which breaks down the sugar into two simpler sugars: glucose and fructose. This process, called inversion, makes the syrup sweeter and more resistant to crystallization than regular sugar. Invert syrup is often used in baking and confectionery, as it retains moisture better than granulated sugar and helps prevent crystallization in candy making. It also has a slightly different flavor profile than regular sugar, with notes of honey and caramel. Invert syrup is commonly found in commercial products like soft drinks, jams, and sauces, but can also be made at home with a few simple ingredients.
