So, what is schabzigerklee?

Schabzigerklee, also known as blue fenugreek, is a lesser-known herb that is popular in Swiss cuisine. It is a member of the legume family and has a distinct blue-green color and a strong, pungent aroma. The flavor of schabzigerklee is somewhat similar to fenugreek, but with a slightly bitter and earthy taste. It is commonly used in cheese making, particularly in the production of Schabziger, a traditional Swiss cheese made from cow's milk. In addition to its use in cheese, schabzigerklee can also be used to season meats, vegetables, and breads, adding a unique and exotic flavor to any dish.
