This versatile ingredient is commonly used in baking as a leavening agent to help dough and batter rise, and to create a light and fluffy texture in cakes, cookies, and bread. Sodium hydrogen carbonate is also used in cleaning and personal care products, as well as in medicine to treat heartburn and indigestion. Its chemical formula, NaHCO3, makes it a compound that easily reacts with acids to produce carbon dioxide gas, which is responsible for the rising effect in baked goods.
