Potassium tartrate, also known as cream of tartar or tartrates de potassium in French, is a white crystalline powder that is commonly used as a food ingredient. It is a byproduct of the winemaking process and is often added to baked goods to activate baking powder, stabilize egg whites, and prevent sugar from crystallizing.
