Violaxanthin is a natural pigment found in many fruits and vegetables, including yellow peppers, zucchinis, and papayas. This carotenoid compound belongs to the group of xanthophylls and has been shown to have antioxidant properties that may help protect against various diseases. Violaxanthin also plays an important role in photosynthesis as it absorbs light energy and transfers it to the reaction center of the plant. Aside from its biological significance, violaxanthin is also used in the food industry as a natural colorant for various products such as dairy, confectionery, and beverages.
