It is derived from vegetable oil and consists of a mixture of esters made from acetylated mono- and diglycerides and tartaric acid. This ingredient helps to prevent the separation of oil and water in food products, resulting in a smoother texture and longer shelf life. E472e is considered safe for consumption by regulatory agencies, but some studies suggest that excessive intake may have negative health effects.
