So, what is acetylmethylcarbinol?
Acetylmethylcarbinol, also known as 2-acetonyl-1-methylpyrrole or simply AMC, is a colorless to pale yellow liquid with a sweet, slightly caramel-like odor. It is a natural metabolite produced by bacteria in the fermentation process of certain foods, including yogurt, kefir, and cheese. AMC has also been identified as a flavor compound in roasted coffee and baked goods. In addition to its flavor properties, AMC has been studied for its potential health benefits, including antimicrobial and anticancer properties. As a food ingredient, AMC is generally recognized as safe by regulatory agencies.
