So, what is borraja?

Borraja, also known as borage, is a leafy green vegetable that is commonly used in Mediterranean cuisine. It has a slightly sweet, grassy flavor with hints of cucumber and is often compared to spinach or kale. Borraja is packed with nutrients, including vitamins A, C, and K, as well as minerals like potassium and calcium. It is a versatile ingredient that can be eaten raw in salads, sautéed as a side dish, or used as a flavorful addition to soups and stews. Additionally, borraja is believed to have medicinal properties, such as anti-inflammatory and diuretic effects.
