D'anhydride sulfureux, also known as sulfur dioxide, is a common food ingredient used as a preservative and antioxidant. It is a colorless gas with a pungent odor and is highly soluble in water, which makes it easy to use in a variety of food applications. Its ability to prevent the growth of microorganisms and slow down the oxidation of food helps to extend the shelf life of many products, including wine, dried fruits, and processed meats. While it is generally recognized as safe for consumption in small quantities, it can cause respiratory and digestive issues in some individuals and must be properly labeled on food packaging.
