Polyglycerin-polyricinoleate, also known as PGPR, is a food ingredient that is widely used as an emulsifier in chocolate and other confectionery products. It is made by esterifying polyglycerin with ricinoleic acid, which is derived from castor oil. PGPR has the ability to reduce the viscosity of chocolate and improve its flow properties, making it easier to process and mold. In addition, it helps to stabilize the mixture, preventing the separation of fat and water. PGPR is considered safe for consumption by regulatory agencies and is commonly used as a substitute for more expensive emulsifiers such as lecithin.
