So, what is zucchero invertito?
Zucchero invertito, or inverted sugar, is a sweetener commonly used in the food industry. It is produced by breaking down sucrose into its component sugars, glucose and fructose, through a process called hydrolysis. This results in a syrupy liquid that is sweeter and more soluble than regular sugar, making it a popular ingredient in confectionery and pastry. Zucchero invertito also helps to prevent crystallization and increase the shelf life of baked goods. Its mild, honey-like flavor and ability to retain moisture make it a versatile ingredient in many recipes.
