So, what is field sow-thistle?
Field sow-thistle, also known as Sonchus arvensis, is a wild edible plant that is commonly found in fields and along roadsides. This herbaceous perennial produces rosettes of dark green leaves with prickly edges and yellow flowers that bloom from late spring to early summer. The leaves can be harvested and used in salads, soups, or sautéed as a vegetable. Field sow-thistle is a rich source of vitamins A and C, as well as minerals such as iron and potassium. It also has medicinal properties and has been traditionally used for its anti-inflammatory and diuretic effects. With its unique flavor and nutritional benefits, field sow-thistle is a wonderful addition to any culinary adventure.
