So, what is melassa?

Molasses, also known as "melassa" in some cultures, is a thick, syrupy byproduct of the sugar refining process. Darker and less sweet than regular table sugar, it is rich in vitamins and minerals like iron, calcium, and potassium. The deep, complex flavor of molasses is often used in baking and cooking to add depth to dishes like gingerbread, baked beans, and barbecue sauce.
